Blueberry Kamut Pancakes with Buttermilk Syrup

I am trying a new recipe tomorrow morning for breakfast. I am sharing the recipe and hope you will try it too. I watched a segment on t.v. yesterday afternoon. It was "Chef Brad's Grainology". He was making things with Kamut flour. It is a type of wheat flour. It looked good and interesting. I will try it out and then post how it turned out and if it was as flavorful as it looked.

Here is the Recipe:

Blueberry Kamut Pancakes

4 eggs
2 cups buttermilk
1 tablespoon vanilla
3 tablespoons oil
1 tablespoon baking powder
2 tablespoons sugar
dash of salt
2 to 3 cups Kamut flour
fresh blueberries

In a mixing bowl combine everything but the blueberries. Using a wire whisk, mix the batter until combined. Be careful to not overmix the batter, stop when just combined. Ladle the batter onto a hot griddle and add the blueberries to the top of each pancake at this point. Flip each cake when the sides harden and the underside is golden brown. Serve with delicious Almond Buttermilk Syrup.

Almond Buttermilk Syrup

3/4 cup butter
1 1/2 cups sugar
3/4 cup buttermilk
1 1/2 teaspoons baking soda
1/2 teaspoon vanilla
1 tablespoon almond extract

In large sauce pan, melt the butter. Then add the sugar and buttermilk. Bring to a boil. Then add in the baking soda, vanilla and almond extract. It will bubble up, because of the soda. Don't be alarmed, it will settle down. It is delicious! Give it a try!
